The simplest unsaturated dicarboxylic acid. It was first found in Corydalis Corydalis, and is also found in a variety of mushrooms and fresh beef. The fumaric acid and maleic acid are geometric isomers of each other, and the fumaric acid is heated to 250-300°C and converted into maleic acid. Fumaric acid can also generate monobasic and dibasic esters or amides, but not monobasic acid chlorides. It reacts with phosphorus pentachloride or thionyl chloride to form dibasic acid chlorides. The oxidation of fumaric acid by potassium permanganate produces racemic tartaric acid.
In food, it is mainly used in the processing of meat products and fish products. Fumaric acid can be used as acidity regulator, acidulant, antioxidant aid, pickling accelerator and spice. This product has a strong buffering effect to keep the pH of the aqueous solution around 3.0, and plays an important role in inhibiting bacteria and mildew.
