Streptococcus thermophilus is an important lactic acid bacteria used in the production of milk, cheese and other dairy products. The organism is a thermophilic gram-positive bacterium and has an optimal growth rate at 45 °C. It can also produce energy in the form of adenosine triphosphate (ATP) through aerobic respiration; however, it can still produce ATP through fermentation in the absence of oxygen. Streptococcus thermophilus lacks cytochromes, oxidase and catalase. It has no motility and does not form spores.
