Glucoseisomerase (GI), also known as xylose isomerase, refers to an isomerase that can isomerize aldoses such as D-xylose, D-glucose, and D-ribose into corresponding ketoses. Glucose isomerase is an intracellular enzyme that participates in the utilization of xylose that enters the body. Later, it was discovered that it can convert D-glucose into D-fructose outside the cell. The application of this enzyme can convert the above sugar in glucose syrup into fruit essence, which greatly improves the sweetness.
